Cilantro to spice up downtown area
Los Arcoiris is opening a second location called Cilantro's Mexican Grill and Cantina at the former Paolucci's site. With construction going on now, the new restaurant plans to open in just a few weeks.
"Permits were issued this past February. They told us they expect to open at the end of March," said Bill Bailey, planning and inspections director for the town of Boone.
Cilantro's will hold about 130 seats inside the restaurant and will have a bar.
Construction for Cilantro's began about six weeks ago, according to owner Alfredo Alverez. They are currently trying to finish last-minute painting, touch-ups and cleaning before Cilantro's opens next weekend.
"I have been thinking for a while that downtown Boone needs a Mexican restaurant," Alverez said. "There's lots of potential business downtown because it is within walking distance of shops, businesses and Appalachian State. For years, people have been asking for another restaurant like Los Arcoiris."
The menu will be similar to Los Arcoiris, according to Alverez. He has had the idea of opening another restaurant and calling it Cilantro's for years. Alverez chose the name Cilantro's because that is a main ingredient in Mexican cuisine.
Fidel Ezequiel is doing the painting for the restaurant walls and working daily to ensure Cilantro's can open for business very soon.
